Source and Varieties: Coconut oil is derived from the kernel or meat of mature coconuts harvested from the coconut palm (Cocos nucifera). It comes in two primary forms: virgin coconut oil (unrefined, cold-pressed) and refined coconut oil (processed to remove impurities and odor).

High in Saturated Fats: Around 90% of the fat in coconut oil is saturated. The predominant fatty acid is lauric acid, which makes up about 50% of the fat content. The oil is composed of medium-chain triglycerides (MCTs), which are metabolized differently from other fats.

Solid at Room Temperature: Coconut oil remains solid below 24°C (76°F) and melts into a liquid when heated. Virgin coconut oil has a distinct coconut aroma and flavor, while refined coconut oil has a more neutral taste and scent.
